Take a nice piece of Tofu, not too hard, slice into 1 – 1.5 cm thick slices and arrange standing up. pour a mix of Shoyu over them with 1/2 Shoyu and 1/2 broth made from Shiitake and wakame seaweed with a touch of mirin (sweet cooking sake). Broth needs to be cold when mixing with the Shoyu… Add minced Ginger and some spring onion cut very finely on top and enjoy ;)
